Eggless Gluten-Free Beignets

Beignet  is French pastry made from deep-fried choux pastry. Beignets are  popular in New Orleans as a breakfast served with powdered sugar on top.  Here I made the gluten free and egg-less Beignets.  In the picture, to show how fluffy the Beignets were, I did not dust the powered sugar on them.
